“The king of cheese!” PDO designation states that for a cheese to be called as Parmesan, it has to be produced from cows grazing on fresh grass and hay. True Parmesan cheese has a hard, gritty texture and is fruity and nutty in taste. The cheese is made from raw cow’s milk. We age a minimum four years old and comes from large 80 kg wheels.
