Manchego cheese is an internationally known Spanish sheep’s milk cheese is produced in La Mancha, the home of Don Quixote. Manchego is mild with a slightly briny taste. The traditional use of grass moulds leaves a distinctive, characteristic zigzag pattern on the cheese. Authentic Manchego is only made from the Manchego sheep’s milk. Aged 2-4 years in-house. The rind can be crumbly in texture while the interior of the cheese acquires a butterscotch colour. It has a sweet, lingering taste.
