Majorero cheese, from Fuerteventura, the oldest of the Canary Islands, is a deliciously tangy and rich cheese with a crumbly texture and buttery finish. It is made with the raw milk of the capra majorera, the local breed of goat which produces incredibly flavorful, high-fat milk. The goat dairy farmers of the island combine their resources to produce this fantastic cheese as a cooperative effort. Aged 18 months in-house and rubbed in espelette pepper.
