Lincolnshire Poacher cheese is a British farmhouse cheddar made by the Jones family who milk their own herd of 170 Holsteins. Made between Oct. to May and aged 2 years plus time at Neal Yard’s Dairy. Unlike other cheddars, this is not clothbound. It has a firm plasticoat rind that allows it to breathe. It eventually falls off leaving a natural rind. The texture is firm and the flavour is nutty, sweet and fruity.
