Iberico with Rosemary

Iberico with Rosemary is pasteurized sheep’s milk cheese from Pamplona in North Spain. The cheese is coated in high grade olive oil, then rosemary, permeating both flavours into the cheese. The firm interior has aromas of the fresh herbs with a rich, deep pepperiness to it. It is a bit dry in texture and slightly nutty and piquant.
