Garrotxa cheese is a raw goats milk cheese from Tarragona, Spain. It’s paste is firm, almost flaky, yet moist and smooth. It melts on the tongue, revealing mild herbal flavours and a hint of hazelnuts in the aftertaste. It maintains a fairly long window for enjoyment and can keep well when left out for serving.
