Brillo cheese is a Tuscan sheep’s milk cheese aged in Chianti. Brillo’s Lineage goes back nearly 2000 years when sheep-herding was a popular vocation. The burgundy coloured crust is edible while the wine treatment lends a distinctive flavour to the interior.
