Bleu des Causses cheese is raw milk blue is from the Languedoc-Roussillion region of southern France. It is aged in natural caves called Fleurines. A taste of the Bleu des Causses will proffer a blend of rich milkiness amidst the peppery and spicy notes of the blue mould.It has the  the AOC (Appellation d’Origine Contrôlée) designation.We bring it in at three months and further cured an additional three months
