Bleu de Bresse
Bleu de Bresse cheese was first made in the Bresse area of Burgundy, following WWII. Made from pasturized whole milk, it is whipped and has a fine edible coating which is white in colour and has the aroma of mushrooms. The interior is smooth and creamy. Production of Bresse Blue was started with the objective of providing a milder alternative to blue cheese.
