Beaufort cheese has been celebrated since the Roman era. It takes about 500 litres (130 gallons) of milk to make a 40-45 kg wheel of Beaufort. A raw cow’s milk cheese from the Haute-Savoie mountains of France. It is made with milk from the spring/summer months when the cows are dining on flowers. A flowery diet results in very buttery with a fruity aroma, nutty flavoured with a hint of sweetness.
