Affidélice au Chablis cheese born in Burgundy bears a lot of similarity to Epoisses cheese. A pasteurized full cream cow’s milk in spring-fall season, takes 3-4 weeks to fully mature. Regularly washed with Chablis, a local high-status white wine until the maturing process is over, highlights it’s unique character. Bathing in wine impacts on it’s colour fermentation inside. The deep copper pigmentation signals it’s maturity to reveal a rich and dense texture covered by a soft, moist, orange rind. A mild and savoury flavour adjacent to it’s strong aromatic smell.
